Strawberry Shortcake

Strawberry shortcake is one of my most nostalgic desserts growing up. My Mom made variations to the cake part with homemade shortcake or store bought sponge cake dessert cups. Both were equally delicious! Making this dessert in my kitchen really transported me back when I was a kid eating this dessert with my brother and sister. I hope you get in the kitchen with your friends or family and create some memories while making this dessert. Enjoy!

Ingredients for Strawberries

  • 1 quart of strawberries, rinsed, stems removed and quartered
  • 1 lemon, zested and juice of ½ lemon
  • ¼ cup of granulated sugar

Ingredients for Shortcake

  • 2 ½ cups of all-purpose flour
  • 1 teaspoon of Kosher salt
  • 1 teaspoon of baking powder
  • ¼ cup of granulated sugar, plus 2 Tablespoons, for sprinkling
  • 1 stick of unsalted butter, cold and cubed
  • 1 cup of whole milk, cold
  • 2 Tablespoons of heavy cream

Ingredients for Whipped Cream

  • 1 cup of heavy whipping cream
  • ¼ cup of creme fraiche
  • 2 Tablespoon of confectioner sugar

Directions for Strawberries

  • 1. Put all ingredients in a medium size bowl and toss to combine.
  • 2. Cover and put in the refrigerator to macerate for about 1 hour.

Directions for Shortcake

  • 1. Preheat the oven to 400F.
  • 2. Put all the dry ingredients in the food processor and pulse 2-3 times to combine.
  • 3. Add in the butter and pulse until the butter is pea-size pieces (course crumb consistency).
  • 4. Slowly drizzle in the milk while pulsing until just combined (dough will be sticky).
  • 5. Lightly flour your surface and form the dough into a rectangular shape. Don’t overwork the dough as it will become dense and tough instead of light and fluffy.
  • 6. Roll out into about ½ inch in thickness and cut into squares (you should have about 9).
  • 7. Place on a parchment-lined baking sheet. Brush each shortcake with heavy cream and sprinkle each with sugar.
  • 8. Bake for 15-18 minutes or until golden brown. Allow to cool before assembling.

Directions for Whipped Cream

  • 1. Combine heavy cream, creme fraiche and sugar together.
  • 2. With a whisk, whip until medium peaks form (it holds its shape well on the whisk with peaks that slightly bend over when you lift the whisk), about 2-3 minutes.

Directions for Assembly

  • 1. Place one shortcake on your serving dish, add whipped cream and top with the strawberries. Continue for two more layers and top with whipped cream and strawberries. Enjoy!
