Poached Eggs
Makes 4 Eggs
Ingredients
- 4 eggs
- 1 teaspoon of white vinegar
- Kosher salt
Directions
- 1. In a 12-inch skillet with a straight edge, fill with 3 inches of water. Heat to a simmer, add vinegar (this will help set the egg white) and lower heat to the lowest setting. You might see a bubble here and there, but you should not see active bubbles.
- 2. Crack eggs and put each in an individual ramekin or small bowl.
- 3. Using a spoon, swirl your water creating a vortex. Place the egg in the center. Leave the egg undisturbed for 3 minutes or until the egg white is set and opaque and yolk is soft to the touch.
- 4. Remove with a slotted spoon and blot with a kitchen cloth. Use kitchen shears to trim off any stringy edges. Serve immediately.
