Pecan Pie for Thanksgiving

I had the honor of making desserts for Thanksgiving this year. Such a treat! Lulu (my Mom) usually makes the pecan pie, which is a family recipe that she has been making for years. Also, my sweet nephew asked me to make fried apple pies which we had during an apple festival. He has been thinking about them ever since. I had so much fun making these desserts reliving memories from prior Thanksgivings. I hope you get in the kitchen and make my family's pecan pie recipe with your family and friends. Enjoy!

Ingredients

  • ½ cup dark corn syrup
  • ½ cup light corn syrup
  • 3 large eggs (164 g)
  • ¼ cup of unsalted butter (58 g)
  • ½ cup of granulated sugar (108 g)
  • 1 cup of chopped pecans
  • ¼ teaspoon of Kosher salt (3 g)
  • 1 teaspoon of vanilla extract (5 g)
  • 9 inch, unbaked pie pastry or store bought pie crust

Directions

  • 1. Preheat the oven to 350 F.
  • 2. With a hand mixer, cream butter and granulated sugar together until light and fluffy.
  • 3. Add corn syrups and salt, mix to combine.
  • 4. Add eggs, one at a time, until combined. Mix in vanilla extract.
  • 5. Put chopped pecans in the bottom of the pie crust dish and pour mixture on top.
  • 6. Bake for 45-50 minutes or until the filling is set (a slight jiggle in the center when gently shaken).
  • 7. Let the pie sit at room temperature for 30 minutes prior to serving.
