Low Country Sheet Tray Bake

Serves 4-6

One of my favorite food memories during our wedding was a Lowcountry Boil. The chef prepared this dish for our guest the day prior to our wedding and I think it was a crowd favorite. This flavorful pot of seasoned broth filled with an assortment of shrimp, crab, corn, potatoes, and sausage is a dish that is nostalgic not only at my wedding, but throughout my childhood. It is traditionally spread out on newspapers for a communal, laid-back dining experience. I wanted to pack a lot of flavor into the dish, so I thought putting the ingredients on a sheet tray would do just that. Tossing it in the buttery, garlic sauce flavored with Old Bay seasoning gave the dish a vibrant and spicy punch. My Lowcountry sheet tray bake is not complete without the addition of coleslaw and cornbread. Yum! I hope you get in the kitchen with your friends and family and make this classic Southern dish.

Ingredients

  • 1 lb of large shrimp, peeled and deveined, tail on
  • 1 lb of sweet Italian sausage, whole or cut into 2 inch pieces
  • 4 ears of corn, cut into 2 pieces
  • 1 lb of small red potatoes, cut into half
  • 4 cloves of garlic, minced
  • 2 sticks of unsalted butter
  • 1 Tablespoon of Old Bay seasoning
  • Kosher salt and black pepper, freshly grounded
  • 2 Tablespoons of olive oil
  • ¼ cup of parsley, roughly chopped
  • 1 lemon, sliced in wedges

Directions

  • 1. Preheat the oven to 400 F. Lightly coat the bottom of the baking sheet with olive oil.
  • 2. Add the sausage to the sheet tray and cook for 10 minutes.
  • 3. In a small saucepan over medium heat, add butter, garlic and Old Bay seasoning. Melt the butter, stirring occasionally, for about 5 minutes. Take off the heat.
  • 4. In a medium bowl, toss corn and potatoes in ½ of the butter mixture. Season with salt and pepper.
  • 5. Remove the sausage from the oven and flip over, add the potatoes and corn and cook for 10 minutes.
  • 6. In the same bowl, toss the shrimp in the remaining butter mixture. Add to the sheet tray and cook for 4-5 minutes, until shrimp is pink and the internal temperature of sausage is 160 F.
  • 7. Remove from the oven and season with salt and pepper to taste. Transfer to a serving platter, garnish with parsley and served with lemon wedges. Enjoy!
