Grandmother Harris' Cheese Straws
This recipe has been in our family for 60 years. It was originally written by my great grandmother who loved to make them for her family and friends during the holidays. One Christmas, my Mom wanted a cookbook of her recipes and this was one in her book. All of the recipes were either handwritten or typed on a typewriter. Over the years, this recipe has been modified but it still carries lots of special memories by all the hands that made this delicious snack. Ingredients
- 3 cups all-purpose flour
- 1 lb of sharp cheddar cheese
- ½ lb (2 sticks) unsalted butter, room temperature
- 1 ½ teaspoon of baking powder
- 1 teaspoon of Kosher salt (I used Diamond crystal salt)
- ¾ teaspoon garlic powder
- ¾ teaspoon of Worcheshire sauce
- ¾ teaspoon of cayenne pepper
Directions
- 1. Preheat the oven to 375 F
- 2. In a food processor with grater attachment or use a box grater, grate cheese.
- 3. Add butter to the grated cheese and pulse together until combined. Add Worcheshire.
- 4. Sift dry ingredients together in a bowl and add in batches to the food processor. Pulse together until the dough becomes smooth.
- 5. Shape the dough into a cylinder shape and wrap in plastic wrap. Place in the refrigerator for 30 mins to rest.
- 6. Bring the dough to room temperature and pack it into the biscuit press with a star attachment. Pipe long strips along a parchment lined baking sheet or silicone mat, about 1 inch apart. Then, cut into 3-inch lengths.
- 7. Place them back into the refrigerator for 30 mins-1 hour to rest before baking.
- 8. Bake for 12-15 mins or until the edges are slightly brown. Store them in an airtight container.
