Grandmother Foshee’s Peach Ice Cream

Every summer during peach season, my Mom would use my Grandmother Foshee’s recipe to make homemade ice cream. This recipe has been in our family since the 1960s. The best part of this ice cream besides eating it was taking turns churning with our ice cream maker. In the end, the ice cream tasted that much better! One particular summer, I spent it with my grandmother, fondly known as Gra Gra. She took me to her favorite peach orchard in Fort Valley, GA where I had the most delicious peach ice cream. I hope you churn this ice cream with your family or friends and create some memories!

Ingredients

  • 2 cups of granulated sugar
  • 2 Tablespoons of AP flour
  • ¼ tsp of salt
  • 5 cups of whole milk
  • 3 egg yolks
  • 1 teaspoon of vanilla extract
  • 1 cup of heavy cream
  • 2 Tablespoons of light corn syrup
  • 4 cups of fresh peaches, small diced with 3 cups smashed and 1 cup in pieces
  • 1 Tablespoon of lemon juice

Directions

  • 1. Add ¾ cup of granulated sugar and lemon juice to the diced peaches and refrigerate overnight. This will help soften the fruit and release their juices.
  • 2. Heat a medium saucepan over medium-high heat, add the milk, remaining sugar and salt. Bring to a boil.
  • 3. Remove from the heat and allow it to stand for 5 minutes.
  • 4. Beat the egg yolks and add some of the hot milk mixture into the egg mixture while whisking constantly. This process is called tempering and prevents the eggs from scrambling.
  • 5. Add the egg mixture into the milk mixture. Continue to cook on low heat until the mixture coats the back of a spoon around 5 minutes or until the temperature reaches 185 F.
  • 6. Remove from the heat and add vanilla extract and whisk in the heavy cream.
  • 7. Chill in an ice water bath and place in the refrigerator once it reaches room temperature.
  • 8. Pour the ice cream mixture into the metal cylinder of the ice cream maker. Add ice (5 cups) and rock salt (1 cup), starting with ice and alternating layers until you reach the top.
  • 9. Start churning the mixer until it is a soft-serve like consistency. Then, add your peaches and continue churing until it’s your desired consistency.
